Our take on carrot cake includes grated coconut and fresh ginger adding more flavor to this traditional cake.  Cream cheese frosting tops this delicious cake with a sprinkle of cinnamon sugar on top.

Carrot Cupcake: Flour, Carrots,  Coconut, Sugar, Brown Sugar, Canola Oil, Eggs, Baking Powder, Baking Soda, Cinnamon, Ginger, Vanilla Extract, Nutmeg, Salt.
